Health High Protein Flank Steak Salad

Most of us have fairly busy lives and between our day jobs and running/exercising in the evenings it's hard to prepare a decent meal with so many things going on. If you are looking for a quick and healthy weekday meal we have a great little salad that my wife and I like to make and best part is you can cook it in about the same time it takes to run a 5k!  One of our favorite parts about this recipe is making our own Cilantro Lime salad dressing. Making our own dressing allows us to make just the right amount for 4 meals with no waste, and it tastes so much better with fresh ingredients. We may be runners but my wife grew up in a family of restaurateurs and she picked the season for this flank steak, is simple but packs a ton of flavor.

Here is what you will need:

Steak Salad

1.5 lbs top sirloin or flank steak

5 ounce package mixed greens

2 ounces blue cheese (any crumbly cheese you like will work)

1 cup cherry tomatoes halved

1/8 cup sliced red onion

1/8 cup of green onion chopped

1 avocado cut into chunks

1/2 cup toasted pepitas (pumpkin seeds)

Steak Rub

1/2 tablespoon salt

1 teaspoon black Pepper

1 teaspoon ground cumin

1 teaspoon garlic powder

Homemade Cilantro Lime Dressing

8 tablespoons fresh lime juice

4 garlic clove, minced

2 teaspoon honey

2 teaspoon kosher salt

1 teaspoon ground coriander

8 tablespoons extra-virgin olive oil

4 tablespoon chopped fresh cilantro

Let’s get to cooking:

Cilantro Lime Dressing

**To save time we make the dressing a few days before the salad and keep it in the refrigerator.  The dressings should keep for about a week.

To make the dressing all you really need to do is combine the ingredients in a food processor and blend until they combine.  We like to leave the cilantro a little flakey in the dressing for aesthetics, and we do recommend peeling the garlic and smashing it with your palm or a glass before you throw it in the food processor.  That’s it super quick and easy, and very tasty.

Steak Salad

  1. Start by searing your steak, First lightly coat the steak with olive oil, then we make a rub using the salt, black pepper, cumin, and garlic which gets rubbed on the outside of the steak.  Let it site for a few minutes for the seasoning to set in.

  2. Turn your stove on to medium high, and heat a small amount of olive oil in a pan.  Sear the steak in the pan until it is cooked to your desired temperature, we usually do 3-5 minutes on each side or until the flank steak starts to get a nice crunchy outer crust.  Once the steak is seared let it rest for 5 minutes, then slice thinly.

  3. In a large bowl, combine the mixed greens, blue cheese, cherry tomatoes, red onion, green onion, avocado, and pumpkin seeds.

  4. Add your the steak on top and drizzle with your homemade Cilantro Lime dressing

Serve the salad while the steak is still hot, and enjoy!
